At the heart of this experience is Mezquite, the signature open-fire restaurant at Conrad Punta de Mita. Framed by ocean views and swaying palms, Mezquite is defined by its use of mezquite wood—where fire and smoke enhance the natural flavors of seafood, meats, and seasonal ingredients.

With over 25 years of experience in luxury hospitality, Chef Ghelfi is known for transforming culinary concepts into destination-driven experiences. As Executive Chef at Conrad Punta de Mita, he leads the vision behind acclaimed concepts including Mezquite, blending contemporary technique with a deep respect for local identity and ingredients.
Chef Gustavo Pinet
Executive Chef of Waldorf Astoria Los Cabos Pedregal since 2016, Chef Pinet oversees the resort’s entire culinary program, from El Farallón y Don Manuel's and beyond. His approach merges Mexican heritage with refined technique, highlighted through signature experiences such as Travesía and the Agave Study, positioning Pedregal as a leading culinary destination.
Together, their collaboration brings a dialogue between regions—where Baja’s coastal richness meets the bold expression of fire.
