With more than two decades of experience in luxury hospitality, Juan González Izquierdo, General Manager of Waldorf Astoria Los Cabos Pedregal, leads with a vision that blends authenticity, innovation, and heartfelt service. Born and raised in Málaga, Spain, Juan has held leadership roles across the world’s most distinguished hotels, from New York to London and Barcelona. His journey — from his early beginnings in hospitality to overseeing award-winning properties — reflects a deep passion for excellence and people. Today, he guides Waldorf Astoria Los Cabos Pedregal into a new era following its multi-year transformation, elevating its legacy as a destination that defines effortless luxury and connection by the sea.
Libia Ronco
Resort Manager
As Operations Director, Libia Ronco oversees the various departments responsible for maintaining guest rooms, from housekeeping to concierge services. Throughout her more than 20-year hospitality career, Ronco is one of the resort’s longest standing employees, having previously worked at several luxury properties including The Ritz-Carlton Cancun, Jamaica.
Gustavo Pinet
Executive Chef
Gustavo Pinet has been Executive Chef of Waldorf Astoria Los Cabos Pedregal, the brand’s first resort in Mexico, since 2016 where he oversees all culinary operations for El Farallon, Don Manuel’s, The Beach Club, Crudo, weddings, and social events (including cooking classes), poolside dining and the resort’s in-room dining program.
Jhonatan Adame
Wine Director
As Wine Director at Waldorf Astoria Los Cabos Pedregal have meticulously curated a selection of over 500 wine labels from the world’s most established wine regions and now possesses one of the best champagne selections in Mexico as well as an exclusive selection of French wines. In addition to overseeing the wine program at the resort, Adame is also the curator of The Wine Cellar at Waldorf Astoria Los Cabos Pedregal,
which is home to the second-largest wine collection in all of Mexico.
David Hernandez
Bar Director
Helming from Mexico City with more than 15 years of hospitality and cocktail experience in the luxury space, David Hernandez brings a global perspective to culinary-inspired cocktails while spotlighting local flavors and ingredients.
Pilar Gonzalez
Spa Director
Pilar Gonzalez brings over 20 years of experience in the wellness realm as Waldorf Astoria Los Cabos Pedregal’s new Spa Director. Her role consists of program development and overseeing the operations for the award-winning Waldorf Astoria Spa, and its talented cast of massage therapists, estheticians, and spa attendants.
Zabdi Nava
Executive Pastry Chef
As Executive Pastry Chef, Zabdi Nava brings more than 15 years of culinary and baking experience to the award-winning property. In his role, Nava is responsible for creating delicious delicacies throughout the resort’s culinary outlets such as Don Manuel’s, El Farallon, The Beach Club, Crudo and TRAVESÍA at Su Cocina, as well as weddings, and social events (including cooking classes), poolside dining and the resort’s in-room dining program.
Manuel Huerta
Chef De Cuisine
Chef Manuel Huerta has been with Waldorf Astoria Los Cabos Pedregal working in all culinary operations for over seven years and is Chef De Cuisine at Don Manuel restaurant. Born and raised in Guanajuato Mexico, Chef Huerta brings influences from León and his previous culinary experience at Grand Velas Riviera Maya to Don Manuel’s eclectic and seasonal menu.
Erik Mora
Chef de Cuisine
Chef Erik Mora has been with Waldorf Astoria Los Cabos Pedregal since 2016. As El Farallon Chef de Cuisine, he has refined his craft, emphasizing the importance of strong culinary foundations, respect for ingredients, and the pursuit of unforgettable dining experiences. Born and raised in Puebla, he feels deeply connected to the artisanal processes of Mexican cuisine.
