This October, Pedregal welcomes Chef Travis Swikard for a culinary weekend inspired by the sun-drenched shores of the Mediterranean and Southern California.
The chef and owner of MICHELIN Bib Gourmand–recognized Callie nd the recently opened Fleurette, brings his signature Cuisine du Soleil to Los Cabos—a bright, ingredient-driven expression of coastal cooking shaped by seasonality, classical technique, and the warmth of gathering around the table.
Throughout the weekend, his culinary vision will be complemented by the distinguished wines of Fontanafredda, presented by Fabio Bosio, and the artistry of Clase Azul—bringing together Mediterranean flavor, Piedmontese heritage, and the spirit of Mexico along Pedregal’s dramatic coastline.
Chef Travis Swikard
A San Diego native, Chef Travis Swikard spent more than a decade refining his craft alongside Daniel Boulud and Gavin Kaysen in New York City before returning home to open Callie.
His signature Cuisine du Soleil brings together the vibrant flavors of the Mediterranean and the seasonal abundance of Southern California. Today, that vision unfolds at Callie—recognized by the MICHELIN Guide with a Bib Gourmand—and at Fleurette, his intimate La Jolla restaurant inspired by the French-Italian Riviera.
Fabio Bosio

Born and raised in Piedmont, in the heart of the Barolo region, Fabio Bosio brings more than a decade of experience spanning winemaking, international markets, and the global presentation of Italian wine.
Since 2019, he has been part of Fontanafredda, one of Piedmont’s most historic wine estates. Today, he leads its Export Department, sharing the heritage, character, and celebrated wines of the region with audiences around the world.

Inspired by the cultural richness of Mexico, Clase Azul México brings together exceptional agave spirits, contemporary artistry, and generations of artisanal knowledge. Each creation is shaped by the human touch—from its tequilas and mezcals to its hand-finished ceramic decanters—expressing a refined vision of Mexican heritage rooted in craftsmanship, hospitality, and a profound sense of place.
