Chef Roberto Alcocer
Roberto Alcocer is the Executive Chef behind Valle in Oceanside, California, the first and only MICHELIN-starred restaurant in the city, and Malva, his long-celebrated culinary destination in Valle de Guadalupe, Mexico. With more than 20 years of experience cooking across Mexico and in MICHELIN-starred kitchens throughout France and Spain, Alcocer has become a defining voice in modern Baja Mexican cuisine, known for vibrant, playful, and deeply expressive cooking rooted in place. At Valle, he brings this perspective to a seasonally driven, California-sourced tasting menu that reflects an intriguing dialogue between Baja’s culinary heritage and the laid-back energy of Oceanside’s coastal surf and skate culture.
Under his leadership, Valle earned its first MICHELIN star in 2023 and retained the honor in 2024, and in 2025 he was named a James Beard Foundation Best Chef: California Semi-Finalist, further cementing his influence on the evolution of contemporary Mexican cuisine.
