The Soul of Modern Mexican Cuisine
With Chef Roberto Alcocer
A Fourth of July Culinary Weekend in Pedregal
From Baja to San Diego, and into Pedregal’s Shores, this Fourth of July weekend invites you into the culinary world of Chef Roberto Alcocer—a journey through modern Mexican cuisine that feels as personal as it is indelible. Rooted in Baja California, shaped by time in France and Spain, and elevated by the seasonal abundance of the California coast, each experience reflects a balance of refinement and warmth, where bright coastal flavors, gentle heat, and precise technique come together in dishes that tell stories of place and memory.
From Valle in Oceanside, his MICHELIN-starred restaurant that redefined modern Mexican dining in Southern California, to Malva in Valle de Guadalupe, Alcocer’s cooking is shaped by both heritage and evolution. Across the weekend, that vision unfolds in intimate, beautifully paced moments where Mexico’s spirit comes alive at the table.
This Fourth of July celebration is best experienced slowly, shared fully, and savored in every bite.
Chef Roberto
Alcocer
Roberto Alcocer is the Executive Chef behind Valle in Oceanside, California, the first and only MICHELIN-starred restaurant in the city, and Malva, his long-celebrated culinary destination in Valle de Guadalupe, Mexico. With more than 20 years of experience cooking across Mexico and in MICHELIN-starred kitchens throughout France and Spain, Alcocer has become a defining voice in modern Baja Mexican cuisine, known for vibrant, playful, and deeply expressive cooking rooted in place. At Valle, he brings this perspective to a seasonally driven, California-sourced tasting menu that reflects an intriguing dialogue between Baja’s culinary heritage and the laid-back energy of Oceanside’s coastal surf and skate culture.
Under his leadership, Valle earned its first MICHELIN star in 2023 and retained the honor in 2024, and in 2025 he was named a James Beard Foundation Best Chef: California Semi-Finalist, further cementing his influence on the evolution of contemporary Mexican cuisine.
