Chef Tatsuya Noda

Tatsuya Noda’s dream is to care for people and the environment while seeking a new standard for the future. Drawing inspiration from his childhood, like his grandmother’s pickles and his mother’s roasted rice, he intertwines the culinary cultures of France and Japan. Meals conclude with a vegetable soup to soothe the stomach, a delightful novelty you won’t forget.

Chef Yoshikazu Yanome

With a contemporary Japanese approach, full of personality. Chef Yanome’s philosophy considers the concept of Edomae Sushi to be fundamental. This concept is a culinary paradigm from the Edo period (1603-1868) that referred to the fresh fish and seafood caught daily in Tokyo Bay. This same idea has been brought for this encounter, as the proposal aims to showcase the marvelous ingredients from the Valencian coast, always giving special prominence to the red prawn. Nigiri takes center stage on the menu!
